"Gluten-free" is becoming a hype and a whole new business segment that companies happily serve with all kinds of "gluten-free" breads, cookies, baking mixes, cereals... Unfortunately most of them are NOT healthy, since they either contain other highly reactive (= likely to cause intolerances as well) and high glycemic foods, such as soy (also very high in anti-nutrients) and corn (very high in omega 6) or all kinds of additives, (rancid) vegetable oils, sugar... in other words, most products are highly processed.
It is a far better idea to replace gluten-containing grains and breads with vegetables, meats, fish, eggs, legumes, nuts, avocado, butter... and reduce your intake of baked goods in general. For those occasions that you do want them, use pure, unprocessed gluten-free grains, legumes, nuts or flours made from them.
